Today, I am sharing the most perfect fall/winter recipe with you. What is better than some chili on a cold day?!
I love this twist on your typical chili recipe and this version has always been a hit in our house. I cannot take the credit for this recipe though- stole it from my sweet mom! I remember growing up and having this for dinner and now here I am cooking it for my family (aka my husband ha!).
What is so great is that you literally throw all the ingredients together and let them simmer for a little bit- that’s it!
White Chicken Chili
Prep Time: 10 minutes
Cook Time: 30-60 minutes
Ingredients
· 1.5-2 lbs. boneless, skinless chicken breast
· 32 oz. chicken broth
· 4 cans Great Northern beans
· 4.5 oz. can green chili peppers, diced
· 2 tbsp. garlic powder
· 1 tbsp. cumin
· 2 tsp. oregano
· 2 tsp. parsley
· 1 tbsp. red pepper flakes
· 1 jar Picante salsa
· ½ cup diced onions
· Salt and pepper to taste
· Optional: diced jalapeños
Directions
1. Boil chicken, let cool and shred
2. Put remaining ingredients on stove and cook on low-medium for 30-60 minutes
I cook this chili in a dutch oven on the stove, but you can certainly use a slow cooker as well. I included some of the items I use to make this below.
