Hey guys! I am so excited to share one of my favorite recipes with you all today! I used to make this a lot in college because it was SO easy + I swear it was one of the reasons Scott ended up marrying me haha! I’m not making any promises, but if you’re dating someone, you may just want to try this recipe out and see what happens! HAHA!
Anyways, I am sharing this recipe today because it is absolutely perfect for Fourth of July! We call it “fruit pizza”- the bottom is sugar cookie, the “sauce” is a mixture of super healthy things (cool whip, cream cheese, powdered sugar, and vanilla), and you just add fruit on top! I know, maybe not the healthiest recipe, but Fourth of July is a holiday and anything goes, right?!
This recipe is perfect for the Fourth because you can easily use strawberries and blueberries to make the pizza look like the American flag!
Normally, I use a circular pizza stone to cook the dough (for a circle-shaped pizza), but today I am using a 9 X 12 cookie sheet, so the finished product looks like a flag. Also, I wanted to mention that this is also a great recipe for wedding/engagement/baby showers, etc! You can make individualized fruit pizzas by making small sugar cookies, applying the white mixture, and then setting out a “fruit bar” with an assortment of fruit so your guests can create their own fruit pizza! So fun and easy!

Fruit Pizza
Ingredients
– 2 packages (20 oz each) refrigerated sugar cookie dough
– 8 oz. cream cheese, softened
– ½ cup powdered sugar
– 1 tsp. vanilla extract
– 4 oz. cool whip, softened
Directions
1. Heat oven to 350 degrees
2. Press dough into either a circle-shaped pizza stone or 9 X 12 cookie sheet (depending on desired shape). For individualized cookies, just make regular sugar cookies on a cookie sheet. Make sure to grease the pan first!
3. Bake approximately 20 minutes or until golden-brown on top
4. Cool completely!
5. Beat cream cheese, powdered sugar, vanilla extract, and cool whip until smooth
6. Spread this mixture over cookie
7. Add favorite fruit
