Today, my mom and I are baking one of my mom favorite desserts- Lemon Lush. No need to be a fan of lemon to enjoy this yummy dessert- I promise it is so good! Perfect for the spring and summer!

Ingredients
- 1 stick butter, melted
- 1 cup flour
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1/2 container (4 oz) of Cool Whip
- 1 teaspoon vanilla extract
- 2 small boxes of instant lemon pudding (can actually use any flavor here!)
- 3 cups milk
- nuts (optional)
Directions
- Mix together the melted butter and flour- press into a 9 X 13 glass baking dress and cook at 350F for 20 minutes or until light brown in color. Let cool. *We also added finely chopped pecans to the crust (optional) *Personally, I think the crust is my favorite part and I really feel like doubling the ingredients here and making it thicker would be amazing!
- Beat together cream cheese, powdered sugar, cool whip, and vanilla until smooth. Spread (very carefully!) over the crust.
- Beat together pudding and milk until smooth and pour over the cream cheese layer.
- Top with cool whip and nuts.
- Place in refrigerator for at least 30 minutes before serving.


Few things I wanted to mention- the center mixture of cream cheese, powdered sugar, cool whip, and vanilla extract also doubles as a delicious fruit dip! My mom would make this all the time growing up for parties and other events- it was always a huge hit! Also, you can substitute the lemon pudding for any flavor- so, if lemon is an absolute no for you just choose another flavor!
