Happy Tuesday! So excited to make this recipe today because a) it is delish, b) it feeds SO MANY PEOPLE, and c) did I mention it is delish?! One of my mom’s friends, Melanie, shared this recipe with my mom years ago and she has been making it ever since. It was always my mom’s go-to if we were having a larger party/event- & it was always a hit!
Corn Dip
Ingredients
- (3) 11 oz. cans of fiesta corn (corn with red & green peppers), drained
- 7 oz can of chopped green chiles, drained
- chopped jalapeƱos to taste
- 1/2 cup chopped green onion
- 1 cup mayo
- 1 cup sour cream
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- 16 oz, shredded sharp cheddar cheese (can buy pre-shredded or buy a block and shred yourself)
Directions
- So easy- just mix everything together! We recommend letting this sit in the refrigerator for at least 30 min before serving!
We normally serve this with tortilla chips or Fritos- make sure to get good ‘scooping’ chips because, believe me, you will really want a lot of dip on your chip! We garnished this with a little chopped cilantro to be fancy (& because I randomly had some in the fridge), but it is definitely not needed. I hope you all enjoy and thank you again for reading!
