Last week when my mom and I were making corn dip, we starting talking about another dip we love- Texas Caviar. I know there are so many different variations and names for this, but irregardless it is THE BEST. So easy to whip together and it is always a hit for parties and get togethers. One thing to note- this is one of those recipes where the longer you let the beans/veggies sit in the liquid mixture, the better it tastes! Also, I HATE celery, but you can’t taste it at all!
Ingredients
- 1 cup olive oil
- 1/2 cup sugar
- 1/2 cup apple cider vinegar
- 1 cup celery, chopped
- 1 small white onion, chopped
- 16 oz can black beans, drained
- 16 oz can black eyed peas, drained
- 1 can shoepeg white corn
- 1 jar of pimentos, drained
- 1 small jalapeƱo, chopped
Directions
- Bring the olive oil, sugar, and vinegar to a boil. Let cool.
- Mixed remaining ingredients in bowl.
- Pour liquid mixture overtop of the beans/veggies and refrigerate overnight.
- Serve with tortilla chips or Fritos!
