We are backkkkk! Cooking with Nina is back! After a brief hiatus (and a trip down to Florida), we are back in business and ready to share more recipes with you! This week, we decided to keep it REAL simple and make a crockpot meal. I absolutely love my crockpot- I may even venture out and say it was my favorite wedding gift haha!
A lot of you ask about what I place in my crockpot- they are liners specifically made for crockpots. These liners make clean up a breeze because all you do it lift the liner out and throw away! My mom used these growing up and we both feel like they are a must for crockpot cooking. *I know some people may be concerned about using these liners with their food (concerns over material getting into the food), but these are made specifically for crockpots and we personally. have no issues or concerns. Whatever floats your boat is good with me 🙂
Today, we are making a pot roast recipe that was sent in from Brandi- thank you Brandi! My mom and I have actually made a similar recipe, but this one calls for the gravy mix- we cannot wait to try it! Brandi said she serves its with mashed potatoes and green beans which sounds amazing!
Mississippi Pot Roast from Brandi
Ingredients
- 1 chuck roast (4-5lbs)
- 1 packet ranch dressing mix
- 1 packet au jus gravy mix
- 1 stick butter
- 5-10 pepperoncini peppers
Directions
Put roast in a crock pot. Sprinkle ranch mix and gravy mix on top. Add butter and place the peppers around it on top of the meat. Cook on low 8-10 hours or until falling apart and fork tender. Enjoy!
In the past when I have made this, we would make sandwiches with the meat- take a hoagie bun, add shredded meat, and top with provolone cheese. Pop in the oven and broil for a few minutes until the cheese is melted and bun is toasted! It is so good! You can also spoon some of the juice from the crockpot and dip the sandwich into it- that is Scott’s favorite!
