Cooking with Nina is BACK! We are so excited to get back to sharing our favorites recipes with you all- I think it’s been almost a month?!
Today, we are sharing the most perfect fall/winter recipe with you. What is better than some chili on a cool fall day?!
I love this twist on your typical chili recipe and this version has always been a hit in our house. My mom has been making this for years and I love that now I am cooking it with my own family 馃檪
What is so great is that you literally throw all the ingredients together and let them simmer for a little bit- that鈥檚 it!
White Chicken Chili
Prep Time: 10 minutes
Cook Time: 30-60 minutes
Ingredients
路 1.5-2 lbs. boneless, skinless chicken breast
路 32 oz. chicken broth
路 4 cans Great Northern beans
路 4.5 oz. can green chili peppers, diced
路 2 tbsp. garlic powder
路 1 tbsp. cumin
路 2 tsp. oregano
路 2 tsp. parsley
路 1 tbsp. red pepper flakes
路 1 jar Picante salsa
路 陆 cup diced onions
路 Salt and pepper to taste
路 Optional: diced jalape帽os
Directions
1. Boil chicken, let cool and shred
2. Put remaining ingredients on stove and cook on low-medium for 30-60 minutes
I cook this chili in a dutch oven on the stove, but you can certainly use a slow cooker as well. If you are short on time you can also use a rotisserie chicken instead of boiling chicken. We usually add shredded cheddar cheese and sour cream on top- I also love eating this chili with tortilla chips or cornbread.
I hope you all enjoy this recipe and we cannot wait to share more! XO- Alexa
