Today we are sharing one of the BEST recipes for fall- Nina’s pumpkin bread! Yes, of course you can buy a box mix….but guys, this one is so much better! It’s actually on my counter right now as I type this and each time I walk by I grab a little piece…at this rate it’s going to be gone by the weekend haha! This recipe is super easy to follow and I bet you already have most of these ingredients. Just a heads up- this makes two loaves of bread, so cut this recipe in half if you just want to make just one!
Ingredients
- 1 cup butter, softened
- 3 cups sugar
- 3 eggs
- 3 cups all-purpose flour
- 1 Tbsp. baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons ground cloves
- 1 1/2 teaspoons nutmeg
- 2 cups pumpkin, which is equal to a 16 oz. can of pumpkin
Directions
- Cream together the butter and sugar using a hand mixer until smooth and creamy. Mix in the eggs, 1 at a time. Mix the flour, baking powder, baking soda, and spices in a separate bowl and then add to the creamed mixture. Mix until well blended and then stir in the canned pumpkin with a wooden spoon.
- Spoon the mixture into 2 greased and floured loaf pans.
- Bake at 350 degrees for 1 hour
