Today, my mom and I are sharing one of my favorite recipes- French toast casserole! I can remember my mom making this every Christmas morning (well, technically she made it the night before) and it was always everyone’s favorite! Making a big Christmas morning breakfast has always been our family’s tradition- my mom would make almost everything the night before and then while we were opening gifts she would pop everything in the oven. It is one of my best memories growing up and I am so happy that my family still gets together every Christmas morning even though we are grown with our own families.
French Toast Casserole
Ingredients
- 1 loaf thick Texas toast (about 20 slices)
- 8 eggs
- 1/2 cup milk (would recommend using 2% or higher)
- 2 cup half and half
- 3 tablespoons sugar
- 1 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Cinnamon Crunch Topping
- 1 1/2 sticks butter, melted
- 1 cup brown sugar
- 1 tablespoon corn syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Directions
- Butter a 9×13 dish completely (bottom, corners, and up sides)
- Place texas toast in rows, overlapping the slices (standing up)
- In a bowl, whisk eggs, half and half, milk, sugar, vanilla, cinnamon, nutmeg and salt. Whisk until well combined.
- Pour mixture over bread slices, covering completely. Spoon some of the mixture in between the bread slices m making sure all the slices are covered.
- Cover with foil and put in refrigerator overnight.
- The next day, preheat oven to 350F. Very carefully flip over each of piece of bread making sure every piece is good and coated.
- Combine ingredients of cinnamon crunch topping in bowl. Spread crunch topping all over bread and bake until puffy and golden brown (about 30-40 min).
- Sprinkle with powdered sugar and serve!
