Woohoo! First cooking with Nina of 2021- let’s do this! It’s crazy that my mom and I started doing this nearly a year ago- last March to be exact. We were obviously spending more time at home and we randomly decided to start sharing recipes… and honestly, I think it may be one of your favorite things!
This week we are sharing a yummy pasta that is quick to throw together (under 15 minutes total!) + it uses fresh ingredients! You can also think of it like a ‘base’ pasta recipe and add to it- protein, veggies- the options are endless! If you are looking to make this a bit healthier you could sub the pasta for whole wheat or chickpea pasta!
Mediterranean Pasta with Basil and Tomatoes
Ingredients
- 18-20 fresh basil leaves
- 1 lb linguine (could sub with healthier option)
- 1/2 cup olive oil
- 1 tablespoon minced garlic
- 1 tablespoon salt (to be added to boiling water)
- 2 pints grape tomatoes, halved
- 2 tablespoons red wine vinegar
- 1 tablespoon of red pepper flakes (this is personal preference, we like it hot haha!)
- salt and pepper to taste
- 3 /4 cup parmesan cheese
Directions
- Boil large pot of water. Add salt and pasta, cook until tender.
- While pasta is boiling, heat olive oil in skillet over medium heat. Add tomatoes and garlic- stir intermittently for 2 minutes.
- Turn heat down to low and add red wine vinegar and pepper flakes.
- Drain pasta and then add pasta to skillet. Stir until pasta is coated in sauce.
- Stir in basil leaves and cheese. Add salt and pepper to taste. Enjoy!
We normally eat this with a salad and maybe some garlic bread! It makes a TON, so you will have plenty of leftovers too! Like I mentioned above, you can absolutely add veggies to this (like bell peppers) or a protein (grilled chicken, sausage).
