Today, Nina and I are sharing one of my FAVORITE recipes- I have been making this for years mainly because its delish, super quick to make, and you’ll end up with lots of leftovers. Funny enough, I have had this recipe written down on an index card (when I left for college I wrote down tons of my mom’s recipes), but Nina claims she isn’t familiar with this recipe haha! I told her that I must have found it in her huge binder of recipes….well, no matter where this recipe came from the bottom line is that it is SO good.
For the past two weeks I have paused our Home Chef meals and I have been cooking- realllllly looking forward to resuming haha! I actually made this recipe last week and went to my blog to link it for y’all- I was going to share that I was making it! I then realized that I have never shared this recipe because I couldn’t find it on my site- that’s when I decided we were going to make it for you this week!
The other thing I wanted to mention about this recipe is that I rarely use actual measurements for the ingredients. This is one of those recipes that you cannot mess up- you want more chicken? Add more. You want it more saucy? Add more cream or Italian dressing. Don’t stress too much about the ingredients and just add more/less until you get the perfect combination.
Creamy Chicken and Noodles
- 1 (6 oz) envelope Italian dressing mix
- 1 (16 oz) package wide egg noodles – I usually use 2/3 of the bag, not the entire container
- 2 tbsp butter
- 3 cups cooked chicken, shredded or chopped – I usually buy a Rotisserie chicken OR I will boil 3 chicken breasts
- 1 cup heavy whipping cream
- 1/4 cup freshly grated parmesan cheese
- 2 tbsp parsley
- Optional: Italian dressing- I will sometimes add a little at the end if I want the pasta more ‘italian’ flavored or if I want it more saucy
Directions
- Cook noodles according to package directions. Drain well and return noodles to pot.
- Stir in butter and toss to coat.
- Stir in chicken, Italian dressing mix, heavy whipping cream, and cheese. If you want your pasta more saucy or Italian flavored, I would add a little Italian dressing until to reach your desired consistency.
- Heat pasta over med-high heat while combining all ingredients. Once heated through top with parsley, serve, and enjoy!
