Happy Thursday- we are so close to the weekend! My mom has been raving about this recipe and has been begging to share it with you all! I’ll admit I was slightly hesitant because it seems to be a bit more work than what I am normally used to, but she said it is amazing and 100% worth it.
My mom said this recipe is really similar to one at an old restaurant she used to go to Louisville, KY. It’s a yummy chicken with a honey mustard-esque sauce- she described it as being similar to a chicken cordon bleu recipe!
One thing to note about this recipe- you must marinate the chicken for at least 4 hours so keep that in mind when prepping. I actually let the chicken marinate overnight (last night), so my mom and I could cook later this morning. Fun fact- we normally cook earlier in the day when we film Cooking with Nina 🙂
Malibu Chicken
Ingredients
- 3 egg yolks
- 2 garlic cloves, minced
- 4 chicken breasts, boneless and skinless
- 6 tbsp butter
- 1 cup Panko bread crumbs
- 1 cup grated parmesan cheese
- 1 tbsp dried parsley
- 1 tbsp garlic powder
- 1 tbsp salt
- 1 tbsp pepper
- 4 slices of Black Forest ham
- 4 slices swiss cheese
Mustard Sauce
- 2 tbsp Grey Poupon dijon mustard
- 3 tbsp mayo
- 1 teaspoon yellow mustard
- 1 teaspoon honey
Directions
- In a small bowl, beat egg yolks with the garlic. Place the chicken breasts and egg mixture in a large Ziploc bag and refrigerate for least 4 hours. You could always make this quickly in the morning and leave in the refrigerator all day or do it the night before.
- Once you are ready to cook, mix together ingredients for the mustard sauce and refrigerate.
- Preheat oven to 400F. Melt butter and pour into the bottom of a 9×13 baking dish. Mix bread crumbs, cheese, parsley, garlic powder, salt and pepper together. Dip your marinated chicken into this panko crumb mixture and place the coated chicken in the baking dish.
- Bake for 15 minutes on each side or until chicken is no longer pink and juices run clear. Top each piece of chicken with a slice of ham and Swiss cheese. Place back in the oven for about 5 minutes or until cheese has melted. Remove from oven and serve with mustard sauce.
This dish also makes for great leftovers- you can cut the chicken into strips and make sandwiches or wraps! This recipe is also great served with rice and a green vegetable. I hope you all enjoy and keep those tags on Instagram coming! We love seeing all the recipes you guys make!
