Today, my mom and I are sharing a super simple recipe that I bet many of you are familiar with- Poppy Seed Chicken. My mom has made this for as long as I can remember and it was always a staple in our house. It is only a few ingredients and comes together very quickly. I feel like its one of those recipes that I always forget about and whenever I do make it I think, “why don’t I make this more?!” Obviously, there are so many different variations of this recipe and ingredients that you can add- mushrooms, peppers, etc. We normally serve the casserole over egg noodles with a side of broccoli.
Poppy Seed Chicken
Ingredients
- 2 lbs. boneless chicken breasts, cooked and shredded
- 1 (8 oz) package sour cream
- 1 can cream of chicken soup
- 1 1/2 cup crushed crackers (we use either Townhouse or Ritz brands)
- 1/2 cup of butter, melted
- 1 tablespoon poppy seeds
Directions
- Combine chicken, sour cream, and cream of chicken soup in bowl. Add mixture to 9×12 baking pan.
- Combine crushed crackers, butter, and poppy seeds. Sprinkle over chicken mixture and bake at 350F for 30 minutes.
That’s it! Such a yummy, creamy chicken mixture with a great crunch on top. Like I mentioned, we serve this over buttered noodles to make it a bit more substantial, but you can certainly eat as is. I hope you all enjoy!
