Hi friends! After a two week break, we are officially back with Cooking with Nina. It has been so much warmer here in Nashville which makes me dream of dinners outside on the patio- that is my favorite! Another one of our favorites?! Homemade salsa….which I have been craving haha! Both my mom and I LOVE Mexican food (especially chips and salsa), but we could never find a store bought salsa that we loved. That’s when we decided to start making our own and I swear it is SO GOOD- and incredibly easy. Anddd since we are making salsa today, let’s just make some homemade guacamole too!
Homemade Salsa
Ingredients
- 2 (15 oz) cans fire roasted tomatoes (we don’t drain)
- 1/2 small red onion, chopped
- 3-4 garlic cloves, mashed
- 1 jalapeño, ribs and seeds removed
- 1 cup fresh cilantro leaves
- juice of 2 limes
- 1/2 teaspoon cumin
- pinch of cayenne pepper
- salt and pepper to taste
Directions
- Add all ingredients to a high-speed blender or food processor.
- Blend for about a minute depending on the consistency you want your salsa- blending longer creates a more liquid consistency. *Also, I do not drain my tomatoes so there is more liquid, but if you prefer a chunky salsa, drain the tomatoes and blend less.
- Serve with favorite tortilla chips!
Homemade Guacamole
- 3 avocados, peeled, pitted, and mashed
- 1 lime, juiced
- 1 teaspoon salt
- ½ cup diced onion (you could also use red onion instead)
- 3 tablespoons chopped fresh cilantro
- 2 roma (plum) tomatoes, diced
- 1 teaspoon minced garlic
- 1 pinch ground cayenne pepper (optional)
- Diced jalapeños (optional)
Directions
- In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
