Today my mom and I are sharing one of our most FAVORITE recipes- homemade Margherita pizza. Before I left for college, I actually wrote down 20 or so of my favorite recipes that my mom would make- this was one of them! I can remember making this in college- it’s super easy and honestly, you can really add what whatever toppings you want!
Personally, I think this margarita pizza is delish on its own, but you can absolutely add whatever you prefer- meats, veggies, or different cheeses! This pizza calls for no red sauce- just a blend of olive oil, garlic, and tomatoes!
Four Cheese Margherita Pizza
Ingredients
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 1/2 teaspoon sea salt
- 4 large roma tomatoes (cut into slices)
- 12 inch pre-baked pizza crust (we use the Boboli brand)
- 8 oz shredded mozzarella cheese
- 4 oz shredded Fontina cheese
- 1/2 cup grated parmesan cheese
- 1/2 cup crumbled feta cheese (we use the one with basil and tomato)
- fresh basil leaves to taste
- red pepper flakes to taste
Directions
- Preheat oven to 400F- we normally use an oven for this recipe, but today we used Scott’s Traeger smoker. We set the temp to 400F as well. When we cook in the oven, we place the pizza on a pizza stone to cook, but when using the traeger/grill, I place the pizza directly on the rack (very carefully haha!)
- Stir together olive oil, garlic and salt. Toss in sliced tomatoes and basil. Allow this mixture to sit for 20-30 minutes (can leave on counter or place in refrigerator).
- Brush pizza crust with some of the olive oil from the tomato mixture- we just dip a basting brush into the bowl and use that to coat some of the pizza.
- Add tomato mixture to pizza and then top with all four cheeses.
- Bake in oven for 15 minutes or on grill for 10-15 minutes- cheese should melt and pizza should start to bubble.
