This past weekend we celebrated my two younger brothers- one graduated from trade school and the other from high school. We had a little graduation party for both of them and used a local barbecue place called Martin’s to cater most of the food. One of my favorite things on their menu (other than the BBQ nachos O.M.G) is their broccoli salad. To be honest, broccoli isn’t something I necessarily crave, but there is something about these ingredients that make it AMAZING… seriously, I swear you’ll love it. It makes for a quick and easy summer side that your entire family will love!
Broccoli Salad
Dressing:
- 3/4 cup mayo
- 1/3 cup apple cider vinegar
- 1/8 cup lemon juice
- 1/4 cup apple juice
- 1 tablespoon garlic powder
- 1 tablespoon horseradish
- 1 tablespoon black pepper
- 1 teaspoon mustard powder
- 1/4 teaspoon salt
- 1/2 teaspoon cayenne powder
Salad Mix
- 1 pound chopped broccoli (I chop into bite-sized pieces)
- 3/4 cup shredded cheddar cheese
- 1/2 cup chopped pecans
- 1/3 cup dried cranberries
- 1/4 cup red onion
- 4 slices of cooked bacon, chopped
- Optional: sunflower seeds for added crunch
Directions:
- In a large bowl, combine broccoli, cheese, pecans, cranberries, red onion, and bacon. In a separate bowl, whisk together sauce ingredients. Pour dressing over salad and toss to coat. Cover and refrigerate before serving.
I will say- this is one of those recipes that the longer it sits in the refrigerator the better (I actually think it tastes best the next day haha!). You could absolutely prepare this the night before you plan to serve it- there is something about giving the sauce time to soak into the broccoli.
