Hi everyone! Oh my gosh, my mom and I have missed ‘Cooking with Nina’ so much over the last few months and we are so happy to be back! We all went on vacation in May as a family and then life got very busy after that.
As many of you know, my parents spent quite a bit of time this summer in Louisville helping with my grandfather. They were there to help care for him and help my grandmother with daily tasks. Unfortunately, my grandfather passed about two weeks ago, but we all know he is in a better, pain-free place. I so appreciate everyone who reached out and gave their prayers and condolences.
Now that my parents are back, I told my mom that we needed to start sharing her recipes again! This dinner recipe has been a staple in my mom’s kitchen and I can remember eating this pretty frequently while growing up! It’s very simple and little ones can help you out by stuffing the shells!
Sausage Stuffed Shells
Ingredients
- I box jumbo pasta shells, cooked according to directions
- 1 pound sweet Italian sausage- cooked, drained, and crumbled
- 1 tbsp garlic
- 3 cups shredded mozzarella
- 15 oz container ricotta cheese
- 1 cup parmesan cheese
- 6-7 fresh basil leaves, chopped
- 24 ounces marinara sauce
Directions
- Preheat oven to 350 F.
- Cook pasta according to directions.
- Brown sausage – while cooking, add in garlic and make sure to crumble the sausage into smaller pieces. Once cooked through, drain sausage.
- In a large bowl, mix sausage, 2 cups mozzarella, ricotta, parmesan cheese, and chopped basil.
- Stuff mixture into cooked pasta shells.
- In a large baking dish, spread some of the marinara in the bottom of the dish. Place your stuffed shells into the dish and then pour remaining marinara over the shells.
- Sprinkle remaining one cup of mozzarella on top and bake for 40 min.
