So many of you requested a recipe for this Lenten season, so here you go! Shrimp enchiladas- comes together pretty quickly and is always a crowd pleaser!
Shrimp Enchiladas
Ingredients
Shrimp Mixture
- 2-3 tablespoons butter
- 1/2 cup red and green bell pepper, finely chopped
- 1/2 cup white onion, finely diced
- 2 cloves of garlic minced
- 1 pound of shrimp, peeled and deveined
- 1/4 cup cilantro, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon cumin
- 1 teaspoon chili powder
- 8-9 large tortillas, flour or corn
Cream Sauce
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cup chicken broth
- 1 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 cup diced canned green chilis
- s & p to taste
- 1/4 cup enchilada sauce OR salsa verde sauce
- 2 cups monterey jack cheese
Garnishes
- sour cream, cilantro, limes, jalapeƱos
Directions
- Preheat oven to 350F. Spray a 9 x 13 baking dish with non-stick cooking spray; set aside.
- Shrimp mixture: using a large skillet, melt butter. Saute bell peppers and onions until softened (3-5 minutes) and then add the garlic. Cook an additional 30 seconds.
- Add in the shrimp and cook 2-3 minutes, or until shrimp starts to turn pink (don’t overcook because it will cook more in the oven). Remove from heat and add in cilantro, salt, cumin, and chili powder. Stir and set aside.
- Cream sauce: in a large skillet melt butter over med-high heat. Add flour and cook 1-2 minutes. Slowly whisk in the chicken broth about a half a cup at a time. Continue to cook, stirring constantly, about 3-5 minutes until thickened.
- Lower heat, stir in sour cream, garlic powder, chilies, and enchilada sauce. Add s & p to taste. Add one cup of sauce to your shrimp mixture, stir to combine.
- Assemble enchiladas – add about 1/3 cup shrimp mixture to a tortilla, roll tightly and place seam-side down in baking dish. Repeat with remaining tortillas.
- Pour the remaining sauce over the rolled tortillas. Sprinkle tortillas with monterey jack cheese
- Bake for 20-30 minutes and enjoy! Can also add garnishes listed above!
