Today my mom and I are sharing the easiest street corn recipe that is a perfect side dish! We are actually going to be having burgers tonight, so this will be a yummy addition! If you don’t want to use ears of corn, you could always substitute with canned corn – easier to eat in my opinion haha!
Roasted Street Corn
Ingredients:
- 1/4 cup mayonnaise
- 1/4 cup Mexican Crema
- 1/2 tsp garlic powder or crushed garlic
- Juice of 1 lime and zest
- 6 ears corn
- 1 tsp chili powder or chipotle powder
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped fresh cilantro leaves
Directions:
- Preheat oven to 400 degrees F.
- In a small bowl, combine mayonnaise, sour cream, garlic powder and lime juice; set aside.
- Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes. You could also do this on a grill!
- Peel down husks and spread with mayonnaise mixture.
- Serve immediately, garnish with chili powder, cotija and cilantro, if desired.
