Oh my goodness it has been a little bit, but Cooking with Nina is back! We traveled in early December and then the holidays/new year were so busy, but we are finally back today to share an incredible recipe! Today, my mom and I wanted to share a very simple recipe – all you’ll need is a few spices (you likely already have most!) and some chicken breasts. We usually serve this chicken over mashed potatoes or rice and have a veggie or salad as a side. We hope you all enjoy!
Pan-Seared Chicken Breasts
Ingredients
- 2 tsp Italian seasoning
- 1 1/2 tsp paprika
- 1 tsp dried majoram
- 1/2 tsp salt
- 1/4 tsp pepper
- 4-6 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 garlic clove, minced
- 2/3 cup chicken broth
Directions
- Combine first 5 ingredients in a bowl. Sprinkle this mixture of spices evenly on both sides of the chicken breasts.
- Add oil to pan over medium heat. Cook chicken breasts in hot oil for 6-8 minutes per side or until done. Remove chicken and let cool on plate.
- To same pan, add garlic and sauté over high heat for one minute. Add chicken broth and cook for 2 minutes, stirring to loosen particles from bottom of skillet.
- Serve this sauce overtop chicken.
