With the holidays right around the corner, we wanted to share one of our favorite breakfast casseroles! Everyone loves a hashbrown casserole, but this one is next level with bacon and ranch seasoning- yes, RANCH. It’s a match made in heaven!
Bacon Hashbrown Breakfast Casserole
Ingredients:
- 2 lb bacon
- 1 bag frozen shredded has browns, thawed (30oz)
- 1 package ranch dressing dry mix
- 2 cups shredded cheddar cheese
- 8 large eggs
- 2 cups milk (we use whole)
Instructions:
- Preheat oven to 350F. Lightly spray a 9×13 inch pan with cooking spray.
- In a large skillet, cook bacon until crispy. Remove bacon from pan and chop. Leave most of the bacon drippings in pan.
- Add hashbrowns to skillet and cook until lightly brown. Place hashbrowns in the prepared baking dish. Top with chopped bacon and cheese.
- Whisk together eggs, ranch dressing mix, and milk. Pour over hashbrown mixture.
- Bake uncovered for 60-70 minutes or until golden brown on top.
