I feel like we all love an easy dinner recipe- bonus if you only need one pan! My mom recently found this recipe (linked here) and we made a couple changes – added peppers- to make it a bit more colorful and flavorful! The beauty of this recipe is that you can eat it with taco shells/tortillas, place overtop tortilla chips (yummy nachos), make it into a bowl with lettuce and sour cream, or just eat alone! My mom also said this would be amazing to stuff in a bell pepper and cook!
Mexican Beef-n-Rice Skillet
Ingredients:
- 1 tablespoon extra-virgin olive oil
- 1 large onion, chopped
- 1 lb ground beef
- 1 cup white rice; can also use brown rice, but will take a little longer to cook
- 1 (15-oz.) can fire-roasted tomatoes
- 1 (15-oz.) can black beans, rinsed & drained
- 1 1/2 cup corn (fresh, frozen, or canned)
- 1 (4-oz.) can green chiles
- 1/2 cup diced green and red pepper
- 1 1/2 cup shredded cheddar and Monterey jack
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- Kosher Salt
- 2 cups low-sodium chicken broth
- Fresh cilantro, for garnish
Directions:
Step 1: In a large skillet over medium heat, heat oil. Add onion and cook 2 minutes, then add ground beef and cook until no longer pink, 6 minutes, breaking up with a wooden spoon as it browns. Drain fat.
Step 2: Move beef to one side of the skillet and add white rice to the other side. Cook 2 minutes, then add fire-roasted tomatoes, black beans, corn, green chilis, cumin, and chili powder. Season with salt and stir to combine, then pour over chicken broth.
Step 3: Bring to a simmer, cover, and cook 20 minutes.
Step 4: Top with cheddar and Monterey Jack and cover to let melt, 2 to 3 minutes.
Step 5: Garnish with cilantro and serve!
Like I mentioned above, you create tacos or burritos with this mixture, nachos, or a bowl! It’s a great recipe to also make early in the week and then you can eat it different ways as leftovers (if that makes sense!).
