Oh my goodness it feels SO good to be back cooking with my mom! I know it’s been a minute, but we are so excited to be sharing one of our favorite dinner recipes- it’s kind of an “all in one” recipe that combines some of our favorite things! Think of this like a casserole- it’s so good, feeds a lot of people, and is very filling. We usually just add a green veggie as a side or a salad and that’s it!
Chicken Bacon Ranch Potato Bake
Ingredients
- 1/2 cup oliv eoil
- 1 tsp salt
- 1 tsp pepper
- 1 packet dry ranch dressing mix
- 4 potatoes, cubed (we use russet)
- 3 chicken breasts, cubed
- 2.5 cups shredded cheese (we use cheddar and Monterey Jack)
- 1 cup crumbled bacon (cooked)
- 1 cup green onion
- Optional: sour cream
Directions
- Preheat oven to 500F – yes, 500F! This will get your potatoes nice and crispy!
- Toss the cubes potatoes in a mixing bowl with the olive oil, salt, pepper and ranch mix until well coated.
- Place potatoes in a 9X12 greased baking dish and bake for one hour. We like to stir the potatoes a bit every 15 minutes! *Just a note- you can prep the potatoes early if you are short on time! The rest of the directions are quick!
- While the potatoes are cooking, mix together the cheese, bacon, and green onion. Set aside.
- Once the potatoes are crispy remove from oven. Decrease oven temp to 400F.
- Add your cubed chicken breasts on top of the cooked potatoes and then top with the cheese/bacon/green onion mixture.
- Return to oven and cook for 20 minutes.
- We like to serve with a little bit of sour cream- heavenly with the potatoes!
