
This has been a tried and true classic in our family for years- very easy with the perfect amount of slightly spicy kick. We usually serve with garlic bread and a salad for an easy weeknight meal. *You can easily omit the mushrooms if you aren’t a fan!
Cajun Chicken Pasta
Ingredients
- 12 oz linguine
- 2 lbs chicken breast, cut into strips or bite-size
- 1 tbsp cajun seasoning
- 1/4 cup butter
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 package of mushrooms (8 oz)
- 2 greens onions, sliced
- 1 1/2 cup half and half
- 1/4 tsp lemon pepper
- 1/4 tsp dried basil
- 1/4 tsp garlic powder
- salt and pepper to taste
- optional: fresh basil to garnish
Directions
- Prepare pasta per directions.
- Sprinkle chicken evenly with cajun seasoning.
- Melt butter in a skillet over med-high heat. Add chicken and sauté 5-6 minutes each side until fully cooked. Remove chicken.
- In same skillet add bell peppers, mushrooms, and green onions. Sauté 9-10 minutes until tender.
- Return chicken to skillet with veggies. Stir in half and half and next 3 ingredients. Cook, stirring often, over med-low heat for 3-4 minutes until thoroughly heated.
- Add cooked linguine and toss to coat. Garnish with fresh basil and serve. Enjoy!
