Hey guys! With Thanksgiving around the corner, I am sure some of you are trying to plan your menu or you’re trying to figure out what in the world you should bring to dinner. I hosted Thanksgiving last year and had to plan a full Thanksgiving feast for 15 people (not that bad, I know!), but I know how overwhelming it can be! Thank goodness for my mom- we ended up splitting up the menu! I worked the weekdays leading up to Thanksgiving, so she literally was a godsend. And, in case you were wondering, everything turned out perfect (or at least I thought so ha!).
Today, I wanted to share a super easy recipe that can quickly be made before you sit down for dinner. This definitely needs to be made day-of, as I think it tastes best immediately after coming out of the oven. I know most people think of green bean casseroles for Thanksgiving, so this is just a little twist on the classic. Oh and it’s good, like real good.
Green Beans with Toasted Almonds
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients
· 1-1.5 lbs fresh green beans
· Olive oil cooking spray
· Salt (to your liking)
· Pepper (to your liking)
· 2 tbsp. sliced almonds
· 1 ½ tbsp. butter
· 1 ½ tsp. soy sauce
· ¾ tsp. balsamic vinegar glaze (I use the Bertolli brand)
· Parchment paper
Directions
1. Preheat oven to 475 degrees and line a baking sheet with parchment paper. Arrange the green beans in a single layer on the baking sheet- do not crowd the beans or they will not roast.
2. Spray beans lightly, but evenly, with cooking spray and sprinkle with salt and pepper (to your liking).
3. Roast beans for 13-15 minutes until crisp-tender with nicely browned, seared spots, stirring them once about halfway through.
4. Once the beans are removed from the oven, place the almonds, spread on a fresh sheet of parchment paper, onto the baking sheet and roast for 1-1 ½ minutes- be careful as they can burn quickly!
5. Meanwhile, as the beans are roasting, begin making the sauce. Place butter in a small saucepan over medium heat. Gently swirl the pan or stir occasionally until the butter has melted, foamed, and turned a rich golden-brown. This will take anywhere from 5-10 minutes depending on how powerful your burners are.
6. Remove butter from heat and add the soy sauce and balsamic glaze.
7. To serve, place beans on a serving plate, drizzle butter sauce over top, and sprinkle with the toasted almonds
