So excited to start sharing more recipes with you all- and to include my mom in this as well! I have inherited my love for cooking from her and she has taught me so much over the years.
As a busy mom, I am always looking for quick and easy dinner ideas that require minimal ingredients and time- this recipe definitely fits that! With only a few ingredients and little prep time needed, it is a perfect dinner after a busy day.
Chicken Cornella
Ingredients
- 6-8 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 cup white vermouth or white cooking wine
- 1/2 pint heavy whipping cream
Directions
- Preheat oven to 350 degrees.
- Place chicken breasts in glass baking dish. No need to grease pan.
- Salt and pepper chicken to taste.
- Combine soups, vermouth/white wine, and cream and pour over chicken breasts.
- Bake uncovered for one hour.
Just as a note- when I make this recipe for us, I only use 2-3 chicken breasts (6-8 would be too many!). You could definitely halve the other ingredients so you don’t have as much sauce, but we personally like all the extra saucy goodness. We typically serve this over a bed of white rice and like that the rice soaks up the sauce. I also will steam some broccoli or green beans to add some veggies in! Just searched the fridge and all we have is a salad bag, so guess that is our ‘green’ tonight! Dinner rolls are another option!
