If you saw stories today, you know that my mom and I were joking that we don’t really know where this recipe came from. My mom claims she has never made this recipe, but I clearly wrote it down (and I swear I copied it from her recipes!). Irregardless, this meatloaf recipe is amazing- it is one of Scott’s favorite dinners! Prep time is quick, there are minimal ingredients, and then you pop it in the oven for an hour! We usually serve with green vegetables and a starch (potatoes or mac).
Best Meatloaf
Ingredients
- 1 egg
- 1 1/2 lb. ground round
- 1 can Rotel, drained
- 1 sleeve Ritz/Tollhouse crackers, crushed
- 1/2 cup onions, chopped
- 1 1/2 teaspoon garlic powder
- Salt and pepper to taste
Glaze
- 1 cup ketchup
- 1/2 cup brown sugar
- 1 teaspoon ground mustard
Directions
- Beat egg. Add meat, Rotel, and crushed crackers.
- Add in onion, garlic, salt, and pepper.
- Mix (I use my hands) until combined and put in a foil-covered glass baking dish. You can shape the meat into a loaf-shape yourself or use a loaf pan to help you out! I usually put all the meat into a loaf pan, pack it in, and then flip the pan over onto the glass baking dish- ta da! Perfect loaf shape!
- Bake at 350F for 1 hour.
- Mix glaze ingredients.
- Remove meatloaf after 50 minutes and pour glaze overtop. Place back into the oven for remaining 10 minutes.

Hi Donna! You can find ground mustard with the spices at your local grocery- but I but regular mustard would work the same!
