This week, Nina and I decided to bake a yummy snack instead of making dinner. I was in the mood for banana bread- plus I had quite a few ripe bananas laying around that needed to be eaten ASAP. We added walnuts and chocolate chips to this batch- you can certainly leave them out or add in different options like dried cranberries, zucchini, nuts, blueberries, etc.
The other great thing about this recipe- I literally had everything I needed already in my pantry. Guess what that means?! No grocery shopping/ordering needed woohoo!
Banana Bread
Ingredients
- 3-4 ripe bananas, mashed
- 1/3 cup butter, melted
- 3/4 cup granulated sugar
- 1 egg, beaten
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 1 1/2 cups all-purpose flour
- Optional: nuts, berries, chocolate chips, etc
Directions
- Preheat oven to 350F. Grease and flour loaf pan or spray with cooking spray
- In a large bowl, combine mashed bananas with the melted butter, then add the sugar, egg, and vanilla. Stir well.
- Sprinkle in baking soda, baking powder, cinnamon, and salt. Stir to combine.
- Add flour and optional add-ins (we did walnuts and chocolate chips). Stir until no streaks of flour remains. Pour the batter into the loaf pan.
- Bake for 50-60 min, until a knife inserted in the center of the loaf comes out clean.
- Slice and serve!
