Today, my mom and I are sharing one of our favorite recipes- Copycat Panera Broccoli Cheese soup! I have actually shared this recipe in the past and I figured now would be a good time to share again! This recipe has few ingredients and comes together fairly quickly!
Even if you’re not a fan of broccoli, I promise you can’t even taste it- the cheesy goodness is the main flavor! You could also add in different veggies or substitute the cream for half and half if you’re looking to up the nutritional value. I hope you guys enjoy!
Ingredients
- 1/4 cup unsalted butter
- 1/2 cup diced onions (yellow or white)
- 1 cup shredded carrots (I use matchstick carrots and cut into bite-sized pieces)
- 2 1/2 -3 cups broccoli, diced into bite-sized pieces
- 1 1/2 cups chicken broth
- 1 cup milk (we use skim)
- 1 cup heavy whipping cream
- 1/4 cup all-purpose flour
- salt, pepper, and red pepper flakes to taste
- 2 cups shredded cheddar cheese
Directions
- In a large pot, melt butter over med-high heat. Add in the onions, carrots, and broccoli. Cook until softened (about 5 minutes, but could be longer if you use more veggies).
- Slowly add in broth, milk, and cream. Sprinkle with flour and add salt, pepper, and red pepper flakes. Continue stirring and heating over medium heat until thickened. This takes 10-15 minutes!
- Once thick, add cheese and stir until melted and smooth. Serve and enjoy!
I normally serve this with bread- we dip it into the soup and it is SO GOOD! If you want to be fancy, you could create bread bowls and eat the soup out of that!
