Cooking with Nina is back after a brief hiatus of one week 🙂 Last week I just wasn’t feeling too well and we had to skip cooking together, but we are back! Today, we are making a yummy pasta salad that my mom has been making for years. It’s actually my aunt’s recipe and I can remember eating this at countless get togethers/dinners over the years. It is incredibly easy and actually tastes even better the longer it sits (I love it on day 2 and 3!). Perfect side to serve with any summer dish!
We actually shared this recipe about two years ago, but both my mom and I have been making it recently and decided it deserved to be shared again!
Pasta Salad
Ingredients
- 16 oz box rotini or penne, cooked and drained
- 1/2 cup mayo
- 1/2 jar Zesty Italian dressing (8 oz)
- 5-6 roma tomatoes, cut into bite-sized pieces
- broccoli, cut into bite-sized pieces
- matchstick carrots to taste
- salad supreme seasoning to taste
Directions
- Cook pasta, drain.
- Add tomatoes, broccoli, and carrots to pasta.
- Whisk Italian dressing and mayo together and then pour over pasta and vegetables.
- Sprinkle with salad supreme seasoning to taste.
- Cover and refrigerate overnight (or at least a few hours!)
As a side note, this makes A LOT- I would definitely cut this recipe in half if I was making it for just two people. Scott and I normally eat this with grilled chicken or burgers- it really is such a great side dish! If you are wanting to make this into more of a main dish, I would just add some grilled chicken on top. We hope you all enjoy!
