Today my mom and I are making a somewhat new recipe- at least its a new recipe for me. My mom said that she has made this a few times at their house and my dad and brothers LOVE it- I have yet to try it out, but I definitely trust that when Nina says its good, its GOOD. I am also a big fan of casseroles because I feel like they are typically pretty easy to whip up plus they can serve a large crowd!
Chicken Taco Casserole
Ingredients
- 3 large chicken breasts
- 2 envelopes taco seasoning, divided
- 1 can cream of chicken soup
- 1 3/4 cup sour cream
- 1 can rotel (do not drain)
- 1 can black beans (rinsed and drained)
- 1 can plain diced tomatoes (drained)
- 5 cups coarsely crushed tortilla chips
- 2 cups shredded cheddar cheese
- toppings: green onions, cilantro, chopped tomatoes, sour cream, queso
Directions
- Preheat oven to 350F and spray a casserole dish with cooking spray.
- Sprinkle taco seasoning over chicken to cover (usually takes one envelope). Place chicken in a skillet with olive oil over med-high heat and cook until done- we then slice the seasoned, cooked chicken into thin slices.
- Combine chicken, soup, sour cream, rotel, beans, tomatoes, and remaining one envelope of taco seasoning in a mixing bowl.
- In the sprayed casserole dish, layer thee chicken mixture with crushed tortilla chips and cheese. Cover with foil and bake for 30 minutes. After 30 minutes, remove foil and continue baking for additional 10 minutes.
- Top with green onions, cilantro, tomatoes, queso, or sour cream. We serve this with rice too!
