Today my mom and I are sharing the BEST chicken recipe- perfect as a main dish, over a salad, or as a bite size appetizer. My brothers also love making slider sandwiches with this chicken + sauce. We use an air fryer because it really makes the chicken perfectly crispy (minus the oil), but you could also fry in the pan to cook.
Bang Bang Chicken
Equipment:
- Air Fryer
Bang Bang Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons raw honey
- 1/2 tbsp sriracha sauce or to taste
Bang Bang Chicken Batter:
- 1 cup buttermilk
- 2/3 cup all-purpose flour
- 1/2 cup cornstarch
- 1 egg
- 1 tsp sriracha sauce or to taste
- salt and pepper to taste
Remaining Ingredients
- 1lb boneless & skinless chicken breast or chicken thighs – cut into bite size pieces
- 1 cup panko breadcrumbs (more if needed)
Instructions:
- To make bang bang chicken sauce, combine all ingredients in a mixing bowl. Whisk until everything is combined. Set aside.
- Make buttermilk batter by combing buttermilk, flour, corn starch, egg, sriracha sauce, salt and pepper. Then whisk until combined.
- Working in batches, dip bite size chicken pieces in buttermilk batter then breadcrumbs and add it into the air fryer. Air fryer should be at 375 for 15ish minutes or until chicken is cooked through. We recommend flipping your chicken about halfway through cook time. Also, make sure not to crowd the chicken pieces inside the air fryer.
- Once chicken is cooked, remove from air fryer and drizzle the sauce over the chicken.
Like I mentioned above, this could definitely work as a main dish (serve over rice + veggies), on top of a salad, as an appetizer (perfect for Mother’s Day get together or graduation parties), or as a slider sandwich.
