Last week for family dinner my mom made this recipe and EVERYONE (yes, even our boys) LOVED it. I have always been a big chicken cordon bleu fan (it’s actually one of Scott’s favorite meals), but I hate making it because I feel like it takes too much time. This recipe combines all the flavors you love into a casserole version that is SO easy!
Chicken Cordon Bleu Casserole
Ingredients:
- 4 cups cooked, shredded chicken
- 1/2 pound deli sliced ham cut into smaller pieces
- 8 oz sliced Swiss cheese cut into smaller pieces (we shredded ours)
- 1- 10.5 oz can cream of chicken soup
- 1- 8 oz container sour cream
- 1/2 cup dijon mustard
- kosher salt, pepper
- 45 buttery crackers (I used ritz)
- 2 tbsp melted butter
Instructions:
- Put the chicken, diced ham, diced cheese, cream of chicken soup, sour cream, dijon mustard, kosher salt, and pepper in a bowl. Toss until evenly mixed and put this into a greased 9×13 casserole dish.
- Put the crackers in a gallon size plastic bag and crush them. Pour the melted butter in the bag and shake until evenly coated. Put the crackers in an even layer over the casserole.
- Bake in a 400 degree oven for 20-25 minutes
