Today, my mom and I are sharing a delicious recipe that is so fun- especially as we headed into warmer weather and cookout season! This recipe can serve as an appetizer or easily become a main dish. The kids typically love it too- I mean, who doesn’t love a tater tot/cheeseburger combo?!
Mini Cheeseburger Tots
Ingredients
Cheeseburger Tots
- 48 tater tots, frozen
- 1 pound ground beef
- 1/2 cup white onion, finely diced
- salt and pepper to taste
- 2 tbsp mayonnaise
- 2 tbsp yellow mustard
- 2 tbsp ketchup
- 2 tbsp pickle relish
- 1 cup shredded cheddar cheese
- mini pickles for garnish
- note: you can absolutely use more/less of these ingredients depending on preference!
Special Sauce
- 1/2 cup mayonnaise
- 4 tbsp pickle relish
- 2 tbsp yellow pmustard
- 1 tsp white wine vinegar
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
Directions
- Preheat oven to 425F.
- Brown ground beef in skillet over med-high heat. One meat is cooked, drain, and then add diced onions into the meat over medium heat until onions have softened.
- Add mayo, mustard, ketchup, and pickle relish to the ground beef and stir to combine. Add salt and pepper to taste.
- Grease a muffin pan and place 3-4 tater tots in each cup. Bake for 10 minutes.
- After 10 minutes, remove tater tots from oven and use a tamper (or your fingers) to press the tater tots down into each cup (you want to create a tater tot cup).
- Fill the tater tot cup with the ground beef mixture and top with cheddar cheese.
- Place tater tots back into oven and cook for another 15 minutes.
- Remove the cheeseburger tots from the oven and let cool before removing from muffin pan.
- While cooling, mix up the special sauce and then drizzle over the cheeseburger tots. Top with mini pickles! Enjoy!
This is such a fun recipe that everyone will love. Perfect as a heavier appetizer or as a main dish- such a fun spin on the traditional cheeseburger + tots! Kids especially love this recipe too (although mine are sometimes weird about pickle relish, so sometimes I leave that out).
