With Valentine’s Day right around the corner, I wanted to share a yummy recipe that we have made for years! Growing up, my mom used to make this recipe on Christmas morning, but I started making it for other special occasions like my husband’s birthday and Valentine’s Day!
I am not a big breakfast person and never really take the time to cook a big breakfast. My husband, on the other hand, LOVES breakfast! Seriously, every weekend he’s up making fancy eggs, bacon, waffles, pancakes, etc. Just give me some cereal or yogurt and I’m good! Since breakfast is literally my husband’s favorite meal, I always try to make something yummy for him on special occasions- and Valentine’s Day falls into this category!
In general, we don’t really make a HUGE deal out of Valentine’s Day. Christmas is typically a big holiday for us and we just feel like buying gifts for each other right after Christmas isn’t that important. Instead, we like to just spend time together!
For me, I feel like reminding the other person how much they mean to you is so important. And that can be as simple as being thoughtful and cooking breakfast for them, helping out around the house (love when hubs does laundry), or by writing them a sweet letter. One of my favorite things to receive from Scott is a handwritten letter-we usually write pretty long messages in our cards on birthdays, anniversaries, and Valentine’s Day. I have held on to each one of these letters and love going back and reading them from time to time! The ones from when we were in college are pretty hysterical!
Anyways, back to the recipe…it is so easy to make, but keep in mind that you must prepare the french toast the night before (the bread soaks overnight!). After cooking, you’ll layer an amazing cinnamon-apple mixture over top that really gives it the WOW factor!
French Toast with Apple Topping
*Must prepare the night before
Ingredients:
· 2 eggs
· ½ cup orange juice
· ¼ cup milk
· 1 tsp. vanilla
· ¼ tsp. cinnamon
· ¼ tsp. nutmeg
· 12 slices white bread
Morning Ingredients:
· 1 stick butter, melted
· ¾ cup orange juice
· ¼ cup brown sugar
· 1 apple, sliced
· ½ tsp. cinnamon
· ¼ tsp. ginger
Directions:
1. Mix all the ingredients from the first section above (NOT the morning ingredients) in a large bowl
2. Dip each slice of bread into the mixture and double up the slices in a buttered baking dish
3. Refrigerate overnight
4. In the morning, preheat oven to 400 degrees
5. Drizzle melted butter (from the morning ingredients) over the bread and place into oven
6. Cook for approximately 25-30 minutes or until bread is golden brown on top
7. While the bread is cooking, mix the brown sugar and orange juice in a saucepan on the stove over med heat until warm
8. Add the sliced apple, cinnamon, and ginger. Cook on low until apple tender.
9. Once the French toast is finished baking, remove from oven, and pour apple mixture overtop
10. Garnish with powdered sugar, syrup, nuts, etc
